Ingredients

  • 180g Garofalo spaghetti

  • 50g pine nuts

  • 100g rocket

  • 10g basil

  • 50g parmesan

  • 150ml olive oil

  • 1 garlic clove

  • Sea salt and black pepper to taste

  • 2 eggs

  • ½ lemon, zest

Preparation

    - To make the pesto, blitz rocket, garlic, basil, pine nuts, olive oil, parmesan, chipotle chilli flakes, salt and pepper.

    - Cook the Garofalo spaghetti in boiling salted water for 10 minutes.

  • 3

    - Drain the pasta and stir through the pesto.

  • 4

    - Twirl onto plates, swirl through a whole egg yolk per portion.

  • 5

    - Sprinkle with extra parmesan, lemon zest, a pinch of chipotle flakes and a few basil leaves. Enjoy!
